Pork Belly Taco

Berkshire pork belly is brined in soy sauce, white vinegar, chili rub, lime juice, and negro modelo. It is then cooked in canola oil until tender, fried until the skin gets crispy and topped with green cabbage, pickled red onions, and pickled jalapeños. Includes salsa verde, salsa de arbol, radishes, pickled onions, jalapenos, and lime wedges on the side.
