I've been cooking one way or another for 20 years professionally, and I want to say: They're doing it right. The seasoning of everything is on point, and every item I had was satisfying to eat. The proteins were cooked just right and the food quality seemed great too. A lot of the time it feels like only the proteins get attention in some places, but each of the sides I've had (cabbage/rice and beans/plantains) can easily stand on their own, and compliment eachother perfectly I think some people expect the entrées to come out smothered in an excess of sauce and spice - and while that can be a fun eating experience, I appreciate that the food feels healthy and intentional in it's seasoning.
