I literally scan for fat and gristly pieces, and I can tell you—besides the al pastor, which wasn’t my favorite and had a few of those fatty bites—the rest was super clean. Minimal fat, nice texture, and you can see in the photos: my plates are basically empty except for those tiny bits. That says something. So why not a 5 out of 5?
