Finding good plant-based breakfast options was my challenge (not a fan of oatmeal or any hot cereal). I've had tofu before, but not scrambled. To me, this is an excellent sub for eggs. The texture is almost identical to that of fluffy soft scrambled eggs, minus the eggy smell. The sausage, peppers, jalapeño and potatoes were savory, spicy and simply delish!
