However, if I am unable to specify that the salmon must be cooked rare or medium rare in order to not overcook within the foil during travel time then the fish arrives super dry, hard and white as it has, the last two times I've ordered it. If you get it in the dining room, it's perfectly cooked, delicate and pink. if I pick it up myself and I call it in, I can specify for it to be slightly undercooked for travel time and it's still fine. But on DoorDash it always shows up hard white and dry. The specific instructions area is not there just to annoy you. They are the correct place for someone to say if they have a food allergy.
