"Lupe Tortilla has the best beef fajitas EVER I've been eating them for 30 years since their first loca in Houston on Highway 6. Over the years I have tried varios other dishes, and as much as I want and need for them to be edible, I have an extreme se to spicy things. I've tried many other d that were stellar, but my mouth and tastebuds cant s the heat. It's 100% a me thing. Ive even been in the res to eat and wanted to try other dishes and had the chefs come out to talk to me to see what they could make me. So kind. I think I also have an acidic sensitivity, and in Tex-mex food with all the tomatoes, and sauces, and various other ingredients, I am unable to have them. But thats still okay with me. I did learn recently that the meat is weighed out before its cooked, not after its cooked. So you lose a bit of finished meat product after they have been cooked. So when you order 1lb./16 ounces of fajitas, the meat is weighed, and then cooked so the final weight of a pound of fajitas is a little less than 1pound/16 oz. I'm glad I asked about this because I was trying to weigh out 4 ounces of meet per fajita meat for my taco and the weights were always off when I was trying to weigh out 4 ounces per taco and I was short ever time. So keep that in mind when you order the fajitas, and maybe get 1.5 lbs. if you like a very full giantic fajita. Flour tortillas are the best EVER, and they are at least 12 inches in diameter, and very thin. PRO FAJITAS LOVER TIP: .Fold the tortilla in half before assembling and you should still have a massive fajita taco with the strength of a stronger tortilla doubled in half to be able to hold the contents without breaking the fajita. The sweet caramelized onions and lime pepper butter are chefs kiss. Perfection. I can eat my weight in them and they are my fav food EVER, and I have loved them since the day I first tried them in Houston. Always 10/10. "
