These plus the five medium shrimp and two tilapia fillets lightly fried in a guajillo sauce make a protein rich meal suited for early in the day. The guajillo sauce here is exceptional. It's a mild tangy mix of fruity and smoky flavor with a hint of garlic. I have to note that the guajillos were expertly prepared - there is no hint of bitterness. The dish is served with three handmade flour tortillas, and you can ask for corn instead.
