It's crusted lightly with a mild peppery dust and seared for just a moment, so it's still raw except for the crust. The ponzu sauce it's served with is *mwah* perfect! My main was the Spicy Maki Combo. I normally go for sashimi, but I was in the mood for something spicy. No regrets. All 3 types of rolls were delicious and succulent and just...yum.
