I opted for pork chashu for my protein and I swear I'm not exaggerating when I say this, Good Chef makes my favorite chashu out of like the 10 ramen shops I frequent. It's squishy, but they keep some meat on the cut and sear it which gives it a mind blowing flavor. The rest of the toppings were very nice tasting, not overpowering, and not soggy. I have to note the diligence in the way this restaurant packages their ramen. They package the broth separate from the noodles and toppings, so they won't get mushy in transit.
