Balthazar is New York City’s most beloved Parisian bistro, an enduring classic from Keith McNally that never disappoints. Part of the lure of the place is definitely the setting, but bring the food home and it will transport you from your dining table to a Parisian boulevard in the 11th arrondissement. It may seem ridiculous to have a cheeseburger from a French bistro, but the one from Balthazar is good enough to warrant such insanity. Steak frites and steak au poivre are also excellent — simple but delicious. The duck confit is marvelous, with crushed Yukon golds, sunchokes, and fiery mustard greens. Sullivan County trout with warm spinach and lentil salad is a nice summer supper. The kitchen also does a couple of really lovely dinners for two that make for an impressive weekend meal; you can’t go wrong with the whole roasted free-range chicken with garlic whipped potatoes, morels, and thyme jus, or the magnificent cut of dry-aged côte de boeuf with glorious onion rings and Bordelaise sauce.
