This SoHo favorite has the kind of menu that everyone likes. It is Italian inasmuch as it specializes in hearty pastas. There is one bowlful of pillow-soft gnocchi in a crushed tomato sauce turned creamy with ricotta, and another with rigatoni in a brawny all’Amatriciana sauce seasoned with guanciale, hot Calabrian chiles, and pecorino cheese. It is also, in a way, a kind of steakhouse serving a hanger steak set among peppers, wax beans, and fingerlings, as well as a bodacious 40-ounce ribeye that becomes a feast for two with double-fried potatoes and a little gem salad. And it’s also a modern bistro with small plates — focaccia with rosemary and olive oil, fried chicken bites with rosemary and fennel — that add up to a meal. But the dish that really put this very New York restaurant on the map when it opened in 2013 was the farro salad. This salad has become a thing of obsession, often copied by home cooks but never quite duplicated. The toothsome grains are first cooked in apple cider before meeting a riot of flavors and crunch: Sungold tomatoes, mint, pistachio, and fat shavings of parmesan, among other add-ins. It’s always the start of a beautiful meal. Keep your eye on the menu as it changes often, and note that it offers the one-click choice of a full meal of salad, pasta, and dessert.
