The name says it all. Ivan Ramen from chef Ivan Orkin is the product of years of culinary training, the study of the Japanese language and literature, and a couple of stints living in Japan. He opened two lauded Ivan Ramens there to critical acclaim before bringing the concept to New York. We can’t pass up steamed pork buns when we see them and neither should you. Here they’re prepared with a Tobanjan-chili glaze, spicy pickles, and scallions. Next, lean in, or over, we should say, to one of the seven can’t-miss ramens. They’re all deeply satisfying, especially the tonkotsu ramen with rich pork broth, shoyu-glazed chashu, wood ear mushrooms, soft egg, pickled mustard greens, and mayu. If you’re not in the mood for noodles, cobble together a complete meal with protein-packed offerings like Japanese chicken katsu curry or Japanese fried chicken, and sides of crispy eggplant and pickled daikon. The unique New York-style Japanese cheesecake wraps things up on a sweet note.
