When chef Tommy Charoen was a young cook in San Francisco, fellow cooks often requested the same dish from him for family meal: khao man gai. Drawing on his Thai heritage, he poached chicken breasts and thighs in a gingery, garlicky broth until the skin was supple and the meat was tender to the touch. Charoen then paired the chicken with jasmine rice cooked in the same liquid so that each grain was plump and fragrant. Now, this universally comforting dish is the star of his and cofounder Bryan Lew’s Thai fast-casual chain, Rooster & Rice. You can order The Original, the one Charoen’s old line cooks loved, which is garnished with cucumbers and cilantro and served alongside a spicy soybean KMG sauce and a sidecar of chicken broth. Or you can enjoy Lew and Charoen’s play on the classic form: The Marina, which comes with brown rice and all breast meat that’s still juicy; The Riceless, as you can imagine; or The Vegetarian, with tofu, brown rice, and seasonal veg. Beyond the chicken-and-rice binary, there’s brothy khao tom gai, thickened with rice and topped with crispy chicken skins, and jiggly mango pudding. You can also add the restaurant’s ginger and habanero hot sauces to your order, bottled for easy dipping at home. Family meal is where it’s at.
