They use olive oil from Italy that they buy at Costco (yes, I researched this) which is a healthy oil as opposed to the canola oil or canola/"veg" oil that every other Ethiopian food restaurant uses in their food. Canola is also GMO and I don't want to support GMOs.
The food here also has markedly less oil, then a restaurant such as Rendevous where everything is slick with oil but delicious.
