It might make more sense to scale prices based on ingredient costs, like charging more for mozzarella than bell peppers or basil, depending on seasonality. Flavor: The crust was perfectly crunchy—an ideal balance between thin and thick. I couldn’t really taste the fontina, likely overshadowed by the mozzarella, and I wish there had been more shiitake. That said, the combination of basil, fennel sausage, caramelized onion, and bell pepper was fantastic: warm, herby, sweet, and savory.
