"I haven't tried everything here, but I can certainly vouch for the Tonkotsu! I recommend the diced chicken. The ajitama is excellent, and that's big for me. The broth is very rich and delicious, the noodles are fresh and very obviously made in house. They have not had pork belly for a long time, and now have re-introduced it. It's decent but not the best I've ever had or anything. I suppose if they have supply problems they have to take what they can get. Michi is among my favorite Ramen restaurants. There are places I prefer, but it is the real McCoy. I will offer some criticisms, however, to be balanced. They use a LOT of salt. It tastes very good, it's not over-salted, taste-wise, but I can tell there's a lot of sodium chloride in there. All restaurants add a lot of salt, and Michi falls at the salty end of the spectrum."
