The tonkatsu ramen broth totally lacked the cravable ramen umami depth and silky mouthfeel which is only obtained when it is slowly simmered long enough to extract collagen from bones. The shoyu tare has an unpleasant metallic tang, a really common shoyu fault. If you try this place, I would recommend ordering a different flavor, since miso and salt tares tend to be more foolproof. The noodles and soft-boiled egg were also a bit overcooked--the restaurant should consider adjusting for how the hot food will continue to cook for . I hate to give a bad review to a place that seems to have nice people trying their best, but I doubt they are in danger of going out of business. I will say that the on the positive side, the ingredients all seemed fresh, the hibachi portion size was generous, and presentation even in delivery packaging looked quite nice."
