"The Pollo Ranchero was delicious, as expected. Idea: the flavors would also work with a mild flavored fish: tilapia, cod, sole. Also, it's REALLY good with a little basic lettuce/tomato/sour cream salad. For that matter, a lightweight fresh salsa/tomato salad. The Chimi was a really good, very low-carb (relatively speaking), high(er) protein option... just saying. In some ways, the star is the queso. I judge my "Mexican" restaurants by the queso.
