At their dining destination Carbone, the Major Food Group has done a lot to show that Italian-American food, when made with uncommon care, is fit for a splurge. At Parm, the flavors are just as compelling, but the dishes are ones to enjoy every day, with prices to match. It’s the kind of food that leaves you weak with hunger after watching an episode of “The Sopranos”: Baked ziti so thoroughly bound by cheese it can be cut into slabs; Italian Combo heros on crusty, sesame-studded rolls piled with mortadella, ham, coppa, provolone, and pepperoni; platters of crispy chicken parm with enough cheese to enrich its pasta side. Since opening the original Mulberry St. location a decade ago, the owners have made adjustments to the menu, allowing guests to customize their orders. Plain tomato sauce not moving you? Opt for meat gravy or spicy vodka sauce. The fried calamari, too, has rightfully earned its rep as one of the best in town.
