If you’ve never had Persian food, Ravagh is a great place to begin your education. This family-owned restaurant serves a beautiful array of Tehrani classics, from the famous tahdig — crispy-bottomed rice – to aromatic stews called khoresh, fire-grilled kebobs, and delicious dips like baba ganoush and hummus, served with housemade Persian bread. A classic Persian feast might go something like this: Start with a Shirazi salad and an assortment of dips, then go for a couple of chargrilled kebobs — the jujeh kebob, bone-in Cornish hen marinated in lemon and saffron marinade; the koobideh kebob, highly seasoned chopped beef; or the popular barg kebob, marinated sirloin — all served with basmati rice, grilled onions, and tomato. Rice is its own category here, and you’d be wise to add to the classic basmati with an order of green rice with fava beans and dill, or the albaloo polo, basmati rice festooned with sweet and sour cherries. Don’t miss out on the ghormeh sabzi, a fragrant stew made from fresh greens and herbs simmered with beef, red kidney beans, and dried lemons, or the khoresh gheymeh, a beef stew made with tomatoes and yellow split peas and brightened with dried lemon.
