Restaurateur Nick Mathers opened the first Ruby’s Cafe in 2003 to capture the vibrant essence of the café scene in Australia, where he’s from. He named it after his grandmother, and Ruby’s Cafe went on to spark an Aussie-dining trend across NYC. Today the cozy, all-day spot is still as popular as ever for “brekkie” and more. Yes, there’s avo toast and vegemite toast, but also toasted banana bread, ricotta hotcakes, and a Big Breakfast with all the essentials: toast, bacon, eggs, mushrooms, and roasted vine-ripened tomatoes. The lunch and dinner offerings are just as satisfying, with pastas like spicy Italian rigatoni and the popular Bronte burger served on a panini (you can also get The Classic cheeseburger on a bun). But there are plenty of veg-forward options as well: a crispy rice bowl comes with puffed wild rice, spicy aioli, halloumi, and a fried egg, and the Malibu Bowl with brown rice, edamame, broccolini, avocado, and a poached egg is a hidden gem. For a real taste of the Aussie good life, add a sticky date pudding for dessert. It comes warm with vanilla ice cream and butterscotch sauce. Need we say more?
