Panino #3 - Calabrese

Freshly baked Ciabatta bread with Calabrese Salami, ham, San Daniele prosciutto, roasted capsicum, provolone piccante and our house almond and rocket pesto. This is one of our most popular rolls. It's the combination of our deli meats and cheese with pesto and fire roasted peppers that makes this one sing, especially when you add some Bippi chilli We choose to make our pesto with the local greens of rocket and spinach and roasted almonds instead of the traditional basil and pine nuts. Aside from its seasonal and grown local advantages we find flavour is more subtle and complimentary to the quality meats being used. The pesto is a paste of rocket and spinach from Ben's Bona Fide Food, a little garlic from Australian Garlic Producers, roasted almonds from Parneet's family, The Grewal's Golden Grain Mills at Lake Cullulleraine, some Grana Padano cheese, lemon juice and olive oil. When in season, we fire roast bullhorn peppers from Out of the Box, which look spicy but are actually quite sweet. The cheese we use in this is Provolone Piccante which is imported from Italy. It is drier, sharper and slightly more pungent than Dolce. The Ham is made and smoked at our local butcher, The Butcher on Deakin. The salami used is Princi Calabrese salami. And the prosciutto is Morgante San Daniele.

Panino #7 - Cotoletta - Chicken

Freshly baked Ciabatta bread with grilled chicken cotoletta (coated in Grana Padano, garlic, olive oil and parsley breadcrumb)slices of local tomato, lettuce and aioli. Fresh chicken is supplied to us by the team at Butcher on Deakin. The chicken is seasoned with Murray River Salt and we dip them straight into extra virgin olive oil, local of course, currently Boundary Bend Estate. We use our leftover ciabatta for crumbs and make a mix with fresh parsley, garlic and Grana padano cheese. To cook, we simply toast them on the flat top grill. Roast garlic from Australian Garlic Producers, egg (yolks) from Benetook Chooks, lemons from the backyard, more olive oil and salt make up the mix for our house aioli. Fresh Cos lettuce is grown by Ben Mitchell at Ben's Bona Fide Food and our conduit to him are the team from Out of the Box who deliver to us all of our beautiful fresh and local goodies. Our tomatoes come from local growers and remarkably, we sustain a full year round supply, sourcing field grown tomatoes for the majority before having to turn to glasshouse through parts of Winter and Spring. Whilst we like the tomatoes to ripen on the vine for as long as possible, our main philosophy with our tomatoes is too allow full maturation at room temperature and never will our tomatoes see a fridge or be held back and be retarded in cold storage. Management of stock levels over a 7 -14 day period sees full flavour development and you will definitely taste the difference. The simple combination and freshness of our produce makes this one of the best schnitty rolls you'll ever taste.
