The bun was fluffy but firm, easily able to hold all the condiments on top of a hearty Colombian sausage. The potatoes gave a good crunch to contrast the soft bun, and the sauces gave layered, contrasting flavors that complimented the meat perfectly. The Cachapa Pollo was another first for me.
