The gluten-free version of our signature vanilla wafer cake is finally here. It is still created using cookies, but we use gluten-free vanilla wafers in this one. Just like our standard vanilla wafer cake, our gluten-free version includes raisins, shredded coconut, pecans and dried cranberries. The recipe has been in our family for over 30 years and we’re happy to share it with you. Our gluten-free vanilla wafer cake is just as versatile as the original vanilla wafer cake. We can still add or remove almost any ingredient and chocolate chips are still an option. In creating a gluten-free version of our vanilla wafer cake, we’ve made sure not to sacrifice the wonderful taste that people have loved for years. When ordering your cake, select ‘Yes’ or ‘No’ for each cake option listed. Each vanilla wafer cake can be customized to include up to two ingredients not listed here.
