Much milder in salt than "potlicker" would suggest but savor and rich flavor full and robust, without being salty at all. Dark in color, no bitter notes, a smooth and balanced bite that coats a sticky clump of neutral mashed potatoes (FuFu explained for the texture challenged eaters). Chopped greens make it easy to chew without being mushy, would pair well with bread or white rice if fufu is not your thing. Tinder bites of meat sum up a larger than expected portion size for the price of this great meal. African food is not meant to be eaten with an American mindset nor palate. Its not a bowl of collard greens with smoked turkey legs or neck bones. The sauce or soup is water based and not very thick but it is hearty and filling. Largely because of the FuFu. My only complaint is that both times I've ordered the spaghetti and had it delivered, it comes in a container that is in a paper bag, and somewhere along the line, tomato tinged water is spilling all over the inside of the bag, so much so that the bag is disintegrating by the time I get it at the door. There is so much liquid that I can actually pour it out of the bag after I remove the food containers from the bag!! This time, it dripped all the way into my house.
