Plus, all the veggies in their sushi rolls taste incredibly fresh and perfectly ripe. You're not going to get slightly grey, over-ripe and mushy avocado from them, nor will you get under-ripe, crunchy avocado from them. I've have never had better avocado on sushi, before, than at Ginza (both times!) Their cucumber is also at a new level of fresh, crisp, and tasty. Their sauces are great! They compliment without overpowering.
So even though I had a very absent/aloof lunchtime server my first time eating there--to the point where I saw the bus boy more than my own server--the food was SO GOOD that I Door Dashed it a couple days later for my husband and I.
