Given the name of the store I anticipated a nice crust/base on the pizza but it might as well have been a supermarket base - a polite thin 'cardboard'. I appreciate that different people have different preferences though. The toppings were initially quite tasty (and the choice of the added chicken was apparently a good one) however the pizza tasted stranger and stranger the more I ate - I wish I could explain how. Not inedible or awful, just very odd. The predominant taste though was an unexpected 'heat'. I'm not sure if that's from the Italian sausage or from an unlisted ingredient like chilli flakes. I want beef sausages fried and cut into chunks, I want chicken to have visible striation so I can tell it wasn't minced and reformed. I want cured meats that are of similar quality to what every average Joe would cook with rather than bulk bought slop. Do any of the cooks here even eat their own recipes without adjustments? I get that many kebab shops stoop to mass producing slop but I thought this place did small servings with more attention to detail to make up for it. The panini's certainly gave that impression but I suppose loaded fries are just to bulk up orders with the cheap stuff in service of that profit margin. I barely ate this food while starving, and I'm left feeling like I just paid money for a wholly bad experience. "I love this place. The Margherita pizza is really fresh with the most perfect, velvety tomato base I've had outside of Brooklyn, and luscious cheese. I recommend adding the buffala - if you're having pizza for dinner you may as well double down on the delicious. A lot of similar places around Perth look good but tend towards overcooking the pizzas so you end up with the wrong texture and unable to taste anything other than charcoal. The only negative with Il Locale is the type of pies they make don't travel that well. They get cold fast and with cooling comes that weird reversal when the dough becomes increasingly soggy and the cheese increasingly firm. I'm only 6 minutes from the restaurant and it's still a thing. I should get off my butt and go sit in the restaurant (totally offers good vibes) but when I just *can't* I am still delighted with my pizza even if the 'middle pizza zone' ingredients have all traded consistencies. The only reason I gave the Piggy a thumbs down is my partner said he didn't like the meat or soggy middle. To which I say he should have ordered a Margherita and appreciated that he doesn't have to get off the couch. You can't please everyone. But I'm delighted he's being precious - more leftovers for me.
