Enough goat cheese (protein) that this salad could have been a meal. The balsamic glaze over the goat cheese & the thinly sliced red onion & beets was enough flavor that I didn't even use the salad dressing. Since there is definitely enough salad for two (or leftovers for tomorrow) I will try it with the dressing tomorrow. I haven't had a salad this good since Thanksgiving.
