"This has been my favorite pasta dish for years. The perfect mix of fresh garlic, spinach, mushrooms and Roma tomatoes, sautéed in EVOO. I like mine with Penne pasta, and topped with grated Parmesan cheese. The portion is generous, so I had some for lunch the next day.
