There is a small amount of chalky texture after you have been chewing it for a while but way less than your average baked vegan treats, they have obviously worked really hard to minimise that. For my taste there could be more shredded coconut and I did think replacing some of the flour/base with fresh ground almond meal might just take this cookie to 5*.
If it wasn't vegan I'd probably give the Vegan Lemon Coco-Chunk a 3-3.5* but it's a genuinely great effort at a dietary-inclusive offering. If the GC team need any taste testers for my almond meal suggestion I am at their disposal!"
