The Nana's Ribs / ናንዬ ጥብስ , or Tibs, are fantastic with a delicious carbonization, and the Inguday Tibs / ኢንጉዳይ was new to me: warm rich tomato sauce with mushrooms dressed in the same spices as their meats.
