My approach has always been to order what's new and on special for freshness or to select items that are made to order. This store and its employees have always been incredibly accommodating with basic reasonable ingredient modifications. So much so that price aside it's clear the kitchen often recognizes the "street food" gringo influence we use to modify our orders. Most comes down to the increase in actual quality veg (cilantro, cabbage, pico, guac, onion etc) that makes the traditional menu worthy.
