I added a picture of my hand over the plate for perspective. That salad cost $24, but probably had about $3 worth of ingredients, including the cost of the container. Think I'll try to replicate this salad by buying all of my own ingredients. LOL! I know they need to make money, but if my estimation is correct, that would be about 87% profit! Is that where the food cost needs to be at to be profitable?
