Half of the container was tripe. and I know the recipe was authentic because on top in the center is an entire hoof and ankle joint. I love cartilagenous meats, and this was perfect. The tripe was tender and not chewy, and each veggie tasted like it was added to the pot at the perfect time to bring out its best flavor. The broth was rich and savory, warm but not spicy hot. If you do this, just make sure you pick a cake that you would actually eat as your original order so if they are out of the birthday cake, then you will just end up with what you originally ordered.
