I have to mention everything I noticed because I've had bánh mì that misses in these departments: The bread is soft inside and lightly toasted, so it's not tough to bite into or cut the inside of your mouth. The pork belly is ALWAYS crunchy. Jalapeños are cut lengthwise for even spice distribution. They have ALL the condiments... they do not skimp - the soy garlic sauce compliments the pork, and they slathered on that pâté like they're making it for their own family. They also put in mayo as a nice balance to the salty-sour. A lot of places only give you 1-2 out of 3 condiments. The carrots are actually pickled - I've had non pickled before and it just doesn't hit. The veggie-meat balance is perfect. I've had my share of bánh mì, and I can tell you they KNOW bánh mì. Their bahn mi is so fresh with fresh baguettes and the flavor is always top notch. Their pho is also incredible. The broth stays hot until you're ready to eat it and the noodles never stick together.
