The hollandaise was tasty and doesnt rely on an overly citrus flavor, and had a good portion size with the meal so I could enjoy it with the hash browns as well. The eggs were poached very well and critically, the English muffin was toasted perfectly. Often these are either soggy or over toasted, but on this Benedict, they were just seared on the edges making it easy to cut and eat but still able to retain its structure. My request to skip the bacon, was honored as well. Additionally, I like the thicker cut hash browns as they keep the toasted char and potato flavor well and the small side of fruit was a great touch as well. I'd just like a little more movement from my noodles and for added fats to be included, but more controlled as per a more professional chef's engagement instead of throwing fat at it and relying solely on it to make the meal.
