The Cabeza was a let down. That's my favorite taco besides Al Pastor. It wasn't as tender as it should've been in my opinion. Other places the meat is so tender it melts in your mouth. You need it to be tender because it lacks flavor. So it was a little tough and flavorless and not good in my opinion. Then there is the Suadero. I've seen many videos from Mexico about it so I was excited to try it. Unfortunately it was very tough. I loved the flavor, it had a deep beef flavor and if it was tender I am sure it would've been my favorite taco, but the meat was hard. I am talking about how it is dark almost black hard and old.
