"I don't know what dark ritual they performed to be allowed access to a french fry recipe this good, but it was worth it. This sounds like the weirdest thing to say about a sub place, but these are the best fries I've ever had. They got the process and cut down perfect in a way that makes the *entire* fry, inside and out, golden crispy. Seriously, I'm gonna nerd out here a moment. They either cut or smash their french fries in a way that lets the fry oil get to as much of the potato as possible from the start of the frying process. Maximum amount of water boiled out as quickly as possible, so every fry is cooked perfectly from end to end, inside and out. And since they've driven out way more moisture than normal, the fries *last*, as in they don't get soggy and reheat very well. Humidity is the doom of fried food deliveries, and these Fries beat those odds. I'm gonna have to stop by and see how good they are fresh out of the oven. I assume oven, because I can't imagine a Firehouse location squeezing space for fryers to get these done. Which also means they reheat perfectly in the oven.
