The pastry dough is perfection, huge rise, crispy on the outside (cue ASMR fork scraping), perfect amount of ham and cheese on the inside to have the flavor but still maintain the integrity/texture that a true croissant need have. And to literally top it all off the Parmesan (or similar?) that they put on top before the bake caramelizes into this crispy, crunchy, salty, flavorful coating on the outside of the pastry that just takes the whole thing to another level.
