But these...oh these short ribs were tender, charred, falling off the bones, and the fat was rendered to an ever so slightly crisped/juicy/flavor bomb. Everything on the side so you can heat up just the broth if you need to before adding it to the rest. Most places add everything together beforehand and if your driver runs late you have to make everything mushy to heat it up so this is a fantastic addition.
